Summer Peach, Basil, and Lilikoi Salad
This salad celebrates the simplicity and simple goodness of summer peaches. These soft, juicy, fuzzy globes are one of my favorite parts about summer. Back home, I used to bike to a local Mennonite farm a few miles away in the summer heat to pick up some fresh peaches that were brought in from Pennsylvania. I couldn’t resist eating one or two on the scenic ride way home, while the juices were running down my face. Summer simplicity in the country. Sweet summer peaches pair beautifully with fresh basil, another summer staple. It comes together quickly and adds some bright color to the table.
Ingredients
3 - 4 ripe peaches, thinly sliced
1 bunch of basil, roughly torn
1 small red onion, thinly sliced
1 quart of cherry tomatoes, halved
1/2 cup of pomegranate seeds
1 lilikoi (passionfruit)
Dressing:
1/2 cup of olive oil
2 tablespoons of champagne vinegar
1 tablespoon of honey
salt + pepper
Mix the dressing in your serving or mixing bowl and set aside. Add the peaches, basil, red onions, tomatoes and toss. Sprinkle with pomegranate seeds and lilikoi. Season with freshly cracked pepper. Best made the day of your gathering.
